Gad Dairies and Remilk present cow-free milk

Israeli innovation meets Israeli tradition in a new product entering the markets — The New Milk, a collaboration between Remilk from Ness Ziona and Gad Dairies. In the first stage, a product will be launched for the professional market of restaurants and cafés, and at the beginning of next year, The New Milk products will also be launched for the consumer market.

For those who are not familiar: The New Milk, which will be produced by a joint company of the two parent companies, is the result of Remilk’s development of a technology for fermentation and mass production of milk — based on milk proteins, but it does not come from a cow’s udder but rather from a fermentation tank containing special yeast that were “trained” to produce milk proteins.

The protein in The New Milk is completely identical to the milk protein produced in cows, but because it is produced by yeast, several positive changes were made compared to animal-derived milk without altering the basic composition of milk:

It contains no lactose and therefore also contains 75% less sugar and 35% fewer calories, it is parve for those who observe kashrut (good news for those who keep kosher and want to drink a cappuccino after a meat meal…), it contains no cholesterol, and it is fortified with calcium, vitamins, and fiber. And most importantly — it tastes like milk, and it behaves exactly like milk in cooking or frothing, with identical stability for anyone who wants to use it in coffee drinks (according to Gad Dairies and Remilk, this is the most common use of milk in Israel).

However, because it is real milk protein, it is not suitable for people with sensitivity to milk protein (but it is suitable for those who are lactose-intolerant, since it is lactose-free).

As part of the launch, a barista milk will first be introduced to the professional market, and in January 2026, the consumer market will receive fortified milk with three percent fat and fortified vanilla-flavored milk. At the event, the consumer shelf price was not yet disclosed.

Remilk developed its product with an investment of 150 million dollars over 6 years, and they proudly say they are the only company in the field that not only holds patents for the unique milk protein and production processes, but is also responsible for the final product reaching the consumer (and of course, it received all required approvals from bodies such as the FDA and the Israeli Ministry of Health).
